Juicy mango comes together with sweet bell peppers, red onion, tart pomegranate seeds, and spicy jalapeño to create a mouthwatering experience when paired with flaky halibut.
Grilled Halibut With Mango Pomegranate Salsa

Ingredients
- 1 mango (diced)
- 1 red bell pepper (diced)
- 1 red onion (diced)
- 14 cup fresh cilantro (diced)
- 12 cup pomegranate seeds
- 1 jalapeño (diced)
- Lime juice (to taste)
- 1 tablespoon olive or avocado oil (optional)
- 2 halibut fillets
- 1 tablespoon butter (melted)
- Salt and pepper to taste
- Lemon juice
Instructions
- In a medium bowl, combine the mango, red bell pepper, red onion, cilantro, pomegranate seeds, and jalapeño. Drizzle with fresh lime juice. For added balance and richness, you can incorporate a splash of olive or avocado oil.
- Preheat the grill to medium-high heat. Prepare the grill by oiling the grates. This will help prevent the fish from sticking to the grates.
- Brush the halibut filets with melted butter and season with salt and pepper. Grill the halibut for about 4-5 minutes per side, or until the fish flakes easily with a fork.
- When the fish is done, remove it from the grill and drizzle it with lemon juice.
- Top with fresh mango pomegranate salsa and serve.
